A hearty and cheesy casserole combining tender chicken, fresh vegetables, and rice, baked to perfection.

Ingredients

Protein

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup bell peppers, diced

Canned Goods

  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup milk
  • 1 cup shredded cheddar cheese

Spices and Oils

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 cup cooked rice or pasta
  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix all ingredients except cheese and olive oil in a bowl.
  • Transfer to a greased casserole dish, top with cheese, and drizzle with olive oil.
  • Bake covered for 25 minutes, then uncover and bake 10-15 minutes until bubbly and golden.
  • Let cool briefly before serving.

Notes

You can substitute cooked turkey or add other vegetables for variety.
