Ingredients

Rice and Chicken Mixture

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil (optional)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix rice, chicken, vegetables, soup, broth, garlic, onion, salt, and pepper in a bowl.
  • Transfer to a greased baking dish, top with cheese.
  • Cover with foil and bake for 25 minutes, then uncover and bake 10-15 more minutes.
  • Let cool briefly before serving. Enjoy!

You can add extra vegetables or cheese for more flavor.
