Ingredients

Pasta

  • 2 cups penne pasta
  • 2 tablespoons olive oil (for sautéing the chicken and garlic)
  • 1 pound chicken breast (diced)
  • 2 cups fresh spinach (chopped)
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (grated)
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1 cup mozzarella cheese (shredded)

Instructions 

  • Cook penne pasta in salted water until al dente, then drain.
  • Sauté diced chicken in olive oil until browned, add garlic and cook briefly.
  • Add spinach and cook until wilted, then stir in cream, Parmesan, and Italian seasoning.
  • Combine cooked pasta with sauce, transfer to a baking dish, top with mozzarella, and bake at 375°F for 20-25 minutes.

Notes

For a lighter version, use less cheese or substitute with low-fat options.
