  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, mix the melted coconut oil, brown sugar, maple syrup, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in the diced apples, rolled oats, walnuts, and raisins if using.
  • Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the edges are lightly golden and the cookies are set.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes
