These chewy maple pumpkin cookies are a delightful treat, perfect for fall. They are soft, flavorful, and can be made with or without chocolate chips.

Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the pumpkin puree, egg, maple syrup, and vanilla extract to the mixture, and mix until well combined.
In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
If using, fold in the chocolate chips until evenly distributed throughout the dough.
Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the centers look set.
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a variation, try adding nuts or dried fruit to the dough.
