These chewy maple pumpkin cookies are a delightful treat, perfect for fall. They are soft, flavorful, and can be made with or without chocolate chips.

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the pumpkin puree, egg, maple syrup, and vanilla extract to the mixture, and mix until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • If using, fold in the chocolate chips until evenly distributed throughout the dough.
  • Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the centers look set.
  • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a variation, try adding nuts or dried fruit to the dough.
