Ingredients

Pasta

  • 8 oz pasta (penne or rotini)

Meat

  • 1 lb ground beef or turkey

Seasoning

  • 1 packet taco seasoning

Canned Goods

  • 1 cup diced tomatoes (canned)

Dairy

  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese

Broth

  • 1/2 cup chicken broth (low-sodium)

Instructions 

  • Cook pasta until al dente, then drain.
  • Brown ground meat in a skillet; drain excess fat.
  • Add taco seasoning and diced tomatoes; simmer 5 minutes.
  • Stir in cream cheese and chicken broth until smooth.
  • Mix cooked pasta into the sauce, then top with shredded cheese and cover to melt.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime before serving.
