Instructions
Preheat oven to 350°F (175°C). Grease a 13×9 inch pan.
Mix potatoes, sour cream, onion, cream soup, 1 ½ cups cheese, melted butter, salt, and pepper.
Spread mixture into prepared pan and bake for 45 minutes.
Top with remaining ½ cup cheese and bake for 10 more minutes until bubbly.
Notes
For a crispier top, broil for an additional 2 minutes before serving.
