Ingredients

Meat and grains

  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 350°F (175°C).
  • Cook ground beef in olive oil until browned; drain excess fat.
  • Mix beef with garlic powder, onion powder, salt, and pepper.
  • Combine beef, rice, broth, soup, and vegetables; transfer to a greased dish.
  • Bake covered 30 mins, then uncover, add cheese, and bake 10-15 mins until bubbly.

Notes

Use lean ground beef for a healthier option.
