A hearty and cheesy casserole combining ground beef, rice, and vegetables for a satisfying meal.

Ingredients

Meat and grains

  • 1 pound ground beef
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup frozen mixed vegetables (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Brown beef, then sauté onion and garlic.
  • Mix beef, rice, broth, soup, salt, pepper, paprika, and vegetables. Transfer to a greased dish.
  • Cover with foil and bake for 30 minutes. Remove foil, add cheese, and bake 10-15 minutes until bubbly.
  • Let cool briefly before serving.

Notes

For a creamier texture, use additional cheese or a splash of milk.
