Delicious and cheesy quesadillas filled with seasoned ground beef, perfect for a quick and satisfying meal.

Ingredients

Meat and Seasonings

  • 0.5 tablespoon olive oil
  • 1 pound ground beef (extra lean)
  • 1 teaspoon chili powder
  • 1 teaspoon ground chipotle chili pepper
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon ground cayenne pepper
  • 1 tablespoon tomato paste
  • 2 tablespoons unsalted beef stock/broth
  • 12 ounces shredded cheese blend (divided (about 3 cups))
  • 6 flour tortillas flour tortillas (about 7 to 8 inches in diameter each)
  • 2 tablespoons vegetable oil (to grease pan)
  • as needed Salsa, guacamole and/or sour cream (for serving (optional))

Instructions 

  • Preheat oven to 200°F (93°C).
  • Cook ground beef with spices until browned, then stir in tomato paste and broth; drain excess grease.
  • Assemble quesadillas by spreading cheese on tortillas, adding beef, then more cheese; fold in half.
  • Cook in a greased pan over medium-low heat until golden and cheese melts, then keep warm in oven.
  • Repeat with remaining quesadillas, then cut each into halves and serve with toppings.

Notes

Store leftovers in an airtight container and reheat before serving.
