This Cheesy Ground Beef and Zucchini Casserole is a hearty and delicious dish that combines ground beef, fresh zucchini, and melted cheese for a comforting meal.
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
Stir in the sliced zucchinis, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes until the zucchinis are slightly softened.
If using rice, stir it into the beef and zucchini mixture until evenly combined.
Transfer the beef and zucchini mixture into a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella and cheddar cheese evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
