This Cheesy Ground Beef and Zucchini Casserole is a hearty and delicious dish that combines ground beef, fresh zucchini, and melted cheese for a comforting meal.

Instructions 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
  • Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  • Stir in the sliced zucchinis, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes until the zucchinis are slightly softened.
  • If using rice, stir it into the beef and zucchini mixture until evenly combined.
  • Transfer the beef and zucchini mixture into a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella and cheddar cheese evenly over the top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

Notes

You can add other vegetables or spices according to your preference.
