Ingredients

Pasta

  • 8 oz short pasta (elbow macaroni or penne)

Meat

  • 1 lb lean ground beef (or turkey/chicken)

Seasoning

  • 1 packet taco seasoning

Canned Goods

  • 1 can diced tomatoes

Dairy

  • 4 oz cream cheese
  • 1 cup shredded cheddar cheese

Instructions 

  • Cook pasta in salted water until al dente, then drain.
  • Brown ground beef in a skillet; drain excess fat.
  • Stir in taco seasoning and diced tomatoes; simmer 5 minutes.
  • Add cream cheese and shredded cheddar; stir until melted.
  • Mix in cooked pasta; serve hot.
