Enjoy the sizzle and flavor of homemade fajitas cooked in a cast-iron skillet. This recipe delivers tender steak and perfectly charred vegetables for a restaurant-quality meal at home.

Ingredients

Fajita Ingredients

  • 1.5 lbs skirt steak (thinly sliced against the grain)
  • 1 large bell pepper (various colors, sliced)
  • 1 large onion (sliced)
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning (store-bought or homemade)
  • 1 lime (juiced)
  • to taste Salt and pepper

Instructions 

  • Marinate steak with 1 tbsp olive oil, fajita seasoning, lime juice, salt, and pepper for at least 30 minutes.
  • Preheat cast-iron skillet over medium-high heat until very hot.
  • Add remaining 1 tbsp olive oil, bell peppers, and onions. Cook until softened and slightly charred, about 5-7 minutes.
  • Remove vegetables from skillet and set aside.
  • Add steak to hot skillet in a single layer. Cook for 2-3 minutes per side, or until seared.
  • Return vegetables to skillet with steak. Toss together.
  • Serve immediately with warm tortillas and your favorite toppings.

Notes

For best results, ensure the cast-iron skillet is very hot before adding the steak to achieve a good sear.
