Ingredients

Meat

  • 1 lb smoked sausage, sliced

Grains

  • 1 cup long-grain white rice

Canned Goods

  • 1 can diced tomatoes with green chilies (14.5 oz)

Broth & Liquids

  • 2 cups chicken broth

Vegetables

  • 1 diced bell pepper
  • 1 diced onion

Garlic & Spices

  • 3 cloves garlic, minced
  • 2 teaspoons cajun seasoning

Frozen & Fresh

  • 1 cup frozen peas

Oils & Fats

  • 2 tablespoons olive oil

Seasonings

  • to taste salt and pepper

Garnish

  • optional chopped green onions

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Add sausage and cook until browned, about 5 minutes.
  • Stir in onion, bell pepper, and garlic; sauté until softened, 3-4 minutes.
  • Add rice, tomatoes, broth, and Cajun seasoning; bring to boil.
  • Reduce heat, cover, and simmer 20 minutes. Stir in peas and cook 2-3 minutes.
  • Season with salt and pepper, garnish with green onions, and serve hot.

Notes

Adjust seasoning to taste and serve immediately for best flavor.
