Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Liquid

  • 1 can coconut milk (14 oz can)

Vegetables

  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red red bell pepper (chopped)

Seasonings & Oils

  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • to taste salt and pepper

Garnish

  • fresh cilantro (for garnish)

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Sauté onion and garlic until softened, then add bell pepper and cook 2-3 minutes.
  • Season chicken with salt, pepper, paprika, and cumin, then brown on both sides.
  • Pour in coconut milk, simmer, cover, and cook 20 minutes until chicken is done.
  • Garnish with cilantro before serving.
