Enjoy flavorful chicken fajitas cooked on a Black Stone griddle. This recipe combines tender chicken with colorful bell peppers and onions for a delicious and easy meal.

Ingredients

Fajita Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (sliced thin)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 large onion (sliced)
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp fajita seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • to taste Salt and pepper
  • Tortillas (for serving)
  • Optional toppings (sour cream, guacamole, shredded cheese, salsa)

Instructions 

  • Combine chicken with olive oil, lime juice, fajita seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Marinate for 30 minutes.
  • Preheat the Black Stone griddle over medium-high heat.
  • Add a light coating of oil to the griddle surface.
  • Place chicken on one side and peppers and onions on the other.
  • Cook chicken for 6-8 minutes, flipping until cooked through.
  • Stir peppers and onions until softened and caramelized, about 7-9 minutes.
  • Mix everything together and cook for 2 minutes.
  • Warm tortillas on the griddle for 30 seconds per side.
  • Serve in warm tortillas with your choice of toppings.

Notes

For extra flavor, add a splash of Worcestershire sauce to the chicken marinade.
