  • 1 pound minced chicken
  • 1 cup diced red onion
  • 1 cup grape tomatoes, cut in half
  • 2 teaspoons italian herb blend
  • 1/4 teaspoon salt
  • 8 ounces whole-wheat penne pasta
  • 2 cups chicken stock, unsalted
  • 1 cup tomato marinara sauce
  • 1/2 cup heavy cream
  • 5 ounces fresh baby spinach leaves
  • 1/2 cup chopped fresh basil, with extra for decoration
  • 1/2 cup shredded mozzarella cheese (low-moisture, part-skim)
  • Grated parmesan cheese (optional) parmesan cheese (optional)

Instructions 

  • Cook pasta according to package instructions; drain and set aside.
  • Heat olive oil in a large skillet over medium heat; cook ground chicken until browned.
  • Add red onion, tomatoes, and herbs; cook until vegetables are tender.
  • Pour in chicken stock and marinara sauce; simmer for 5 minutes.
  • Stir in heavy cream, spinach, basil, and cooked pasta; cook until spinach wilts and mixture is heated through. Top with mozzarella and optional parmesan before serving.

Notes

For a richer flavor, let the dish sit for a few minutes before serving to allow the flavors to meld.
