Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Grains

  • 1 cup uncooked long-grain white rice

Canned Goods

  • 1 can cream of chicken soup (10.5 oz)

Broth & Liquids

  • 2 cups chicken broth

Vegetables

  • 1 cup frozen mixed vegetables

Spices & Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Cheese (Optional)

  • 1 cup shredded cheddar cheese

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix rice, soup, broth, vegetables, garlic, onion, salt, and pepper; spread in a greased baking dish.
  • Place chicken on top, season, cover with foil, and bake for 45 minutes.
  • Remove foil, sprinkle cheese, and bake uncovered for 15-20 minutes.
  • Let rest briefly before serving. Enjoy!

For a richer flavor, add herbs like thyme or parsley.
