  • 1 lb beef sirloin (thinly sliced)
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 2 cloves garlic (minced)
  • 1 packet fajita seasoning
  • 4 cups beef broth
  • 14.5 oz diced tomatoes (undrained)
  • 15 oz black beans (rinsed and drained)
  • 15 oz corn (drained)

Instructions 

  • Heat olive oil in a large pot over medium-high heat.
  • Add beef and cook until browned. Drain excess grease.
  • Add onion and bell peppers and cook until softened, about 5 minutes.
  • Add garlic and fajita seasoning and cook for 1 minute more.
  • Pour in beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in black beans and corn. Heat through.
  • Serve hot with your favorite toppings.

Notes

Adjust the amount of fajita seasoning to your preferred spice level.
