Instructions
Heat olive oil in a large pot over medium-high heat.
Add beef and cook until browned. Drain excess grease.
Add onion and bell peppers and cook until softened, about 5 minutes.
Add garlic and fajita seasoning and cook for 1 minute more.
Pour in beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in black beans and corn. Heat through.
Serve hot with your favorite toppings.
