Ingredients

Meat and Potatoes

  • 1 lb ground beef (80/20 blend for best flavor)
  • 4 medium russet potatoes (diced into ½-inch cubes)
  • 1 large yellow onion (diced)
  • 2 tbsp olive oil or vegetable oil
  • to taste salt and black pepper
  • 2 cloves garlic (minced)
  • 1 diced bell pepper (any color)
  • 1 tsp paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne pepper (optional)
  • 1 cup shredded cheddar cheese
  • 2 green onions (chopped)
  • 2 tbsp fresh parsley (chopped)
  • for serving sour cream

Instructions 

  • Dice potatoes, season with salt and pepper.
  • Cook potatoes in oil until golden and crispy.
  • Brown ground beef with seasonings, then add onion, pepper, and garlic; cook until softened.
  • Top with cheese, garnish with parsley and green onions, serve with sour cream.

Notes

For extra flavor, add a dash of hot sauce or your favorite herbs.
