A flavorful baked chicken dish combining BBQ sauce and ranch seasoning, topped with cheese and vegetables for a satisfying meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup bbq sauce
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup corn (fresh or canned)
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • for garnish chopped green onions

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix BBQ sauce and ranch seasoning. Season chicken with salt and pepper, then place in a baking dish.
  • Pour BBQ ranch mixture over chicken, top with bell peppers, corn, and cheese. Drizzle with olive oil.
  • Cover with foil and bake for 25-30 minutes, then remove foil and bake 10-15 minutes until bubbly.
  • Garnish with chopped green onions before serving.

Notes

For extra flavor, add a dash of smoked paprika or chili powder.
