Ingredients

Protein

  • 1 lb chicken breast, diced

Carbohydrates

  • 1 cup cooked rice

Vegetables

  • 1 cup broccoli florets
  • 1/2 cup carrots, sliced

Dairy & Sauces

  • 1/4 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (optional)

Seasonings

  • to taste salt and pepper

Cooking Oil

  • for cooking olive oil

Instructions 

  • Mix mayonnaise, sweet chili sauce, and sriracha to make the sauce.
  • Cook diced chicken in olive oil until golden and cooked through, about 5-7 minutes.
  • Add broccoli and carrots; stir-fry for 3-4 minutes until tender.
  • Layer rice, chicken, and vegetables in a bowl. Drizzle with sauce and garnish with green onions.

Notes

Feel free to add more sriracha for extra spice.
