Instructions
Preheat oven to 375°F (190°C).
Peel and slice potatoes and onion; mince garlic.
Sauté onions and garlic in olive oil until caramelized.
Boil sliced potatoes in salted water until slightly tender, then drain.
Layer potatoes, onion mixture, and herbs in a casserole; finish with a potato layer.
Bake covered for 30 minutes, then uncovered for 20-25 minutes until golden and cooked.
