Ingredients

Vegetables

  • 3-4 large potatoes
  • 1 large onion
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • to taste Salt and pepper (as desired)
  • optional herbs and spices (of your choice)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Peel and slice potatoes and onion; mince garlic.
  • Sauté onions and garlic in olive oil until caramelized.
  • Boil sliced potatoes in salted water until slightly tender, then drain.
  • Layer potatoes, onion mixture, and herbs in a casserole; finish with a potato layer.
  • Bake covered for 30 minutes, then uncovered for 20-25 minutes until golden and cooked.

Notes

For extra flavor, add your favorite herbs and spices before baking.
