  • 0.5 cup cottage cheese
  • 0.25 cup shredded cheddar or mozzarella (optional)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder
  • chives or green onions, cherry tomatoes (halved)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a baking dish.
  • Whisk eggs, cottage cheese, salt, pepper, and garlic powder.
  • Fold in tomatoes. Pour into dish. Sprinkle cheese on top (optional).
  • Bake for 20–25 minutes, until set.
  • Let sit for a few minutes. Sprinkle chives or green onions. Serve warm.
