Rice and spices
2cupsbasmati rice
4tablespoonsghee or vegetable oil
4-5wholecloves
4-5greencardamom pods
1-2cinnamon stickscinnamon sticks
2bay leavesbay leaves
1teaspooncumin seeds
1teaspoonred chili powder
1teaspoonturmeric powder
1teaspoongaram masala
Meat and vegetables
500gramschicken, cut into pieces
1largeonion, thinly sliced
2tomatoeschopped tomatoes
1/2cupplain yogurt
4tablespoonsginger-garlic paste
2-3green chiliesslit green chilies
1/4cupchopped fresh cilantro
1/4cupchopped fresh mint leaves
Additional flavoring
1teaspoonred chili powder
1teaspoonturmeric powder
salt to tastesalt
Instructions
Rinse and soak rice for 30 minutes, then drain.
Sauté sliced onions in ghee/oil until golden. Add ginger-garlic paste and green chilies; cook 2 min.
Add chicken and cook until no longer pink, then stir in tomatoes, yogurt, spices, and salt; cook until oil separates.
Cook rice until 70% done, drain, then layer over chicken. Sprinkle garam masala and cook on low for 25-30 min.
Let sit for 10 min, then fluff and serve garnished with cilantro and mint.
