This flavorful chicken biryani combines aromatic spices, tender chicken, and fluffy basmati rice for a satisfying meal inspired by Indian restaurant classics.

Ingredients

Rice and spices

  • 2 cups basmati rice
  • 4 tablespoons ghee or vegetable oil
  • 4-5 whole cloves
  • 4-5 green cardamom pods
  • 1-2 cinnamon sticks cinnamon sticks
  • 2 bay leaves bay leaves
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala

Meat and vegetables

  • 500 grams chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes chopped tomatoes
  • 1/2 cup plain yogurt
  • 4 tablespoons ginger-garlic paste
  • 2-3 green chilies slit green chilies
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint leaves

Additional flavoring

  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • salt to taste salt

Instructions 

  • Rinse and soak rice for 30 minutes, then drain.
  • Sauté sliced onions in ghee/oil until golden. Add ginger-garlic paste and green chilies; cook 2 min.
  • Add chicken and cook until no longer pink, then stir in tomatoes, yogurt, spices, and salt; cook until oil separates.
  • Cook rice until 70% done, drain, then layer over chicken. Sprinkle garam masala and cook on low for 25-30 min.
  • Let sit for 10 min, then fluff and serve garnished with cilantro and mint.
