A delicious layered coffee cake featuring fresh apples and a crunchy pecan topping, perfect for breakfast or dessert.

Ingredients

Batter

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 1/2 cup butter (melted)
  • 1 cup sour cream
  • 3 eggs eggs (lightly beaten)
  • 2 teaspoons vanilla extract

Apples

  • 2 medium Granny Smith apples (peeled, cored, finely diced)

Topping

  • 3/4 cup all-purpose flour
  • 3/4 cup packed light brown sugar
  • 1 cup chopped pecans
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup butter (melted)
  • 2/3 cup packed light brown sugar
  • 2 tablespoons apple cider
  • 2 tablespoons butter

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch pan.
  • Mix dry ingredients for batter, then stir in melted butter, sour cream, eggs, and vanilla. Pour into pan.
  • Sprinkle diced apples over batter, then top with pecan mixture.
  • Bake for 40-45 minutes until a toothpick comes out clean.
  • Make glaze by melting butter, sugar, and apple cider; drizzle over warm cake before serving.

Notes

For extra flavor, serve with a scoop of vanilla ice cream.
