Enjoy a quick and healthy pizza alternative with savory portobello mushrooms topped with cheese and your favorite low-carb toppings.

Ingredients

  • 4 large portobello mushroom caps (stems removed)
  • 1 tablespoon olive oil
  • salt and pepper to taste salt and pepper
  • 1/2 cup low-sugar tomato sauce or pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • your favorite low-carb toppings (e.g., sliced bell peppers, onions, olives, cooked sausage) low-carb toppings
  • fresh basil leaves for garnish fresh basil leaves

Instructions 

  • Preheat oven to 400°F (200°C).
  • Clean mushroom caps, place gill-side up on a parchment-lined baking sheet, and brush with olive oil. Season with salt and pepper.
  • Bake for 10 minutes, then remove from oven.
  • Spread tomato sauce inside each mushroom, top with cheese, add toppings, and bake for another 10-15 minutes until bubbly and tender.
  • Garnish with basil and serve immediately.

Notes

Use fresh basil for best flavor and customize toppings to your preference.
