Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 4 medium potatoes, diced

Dairy

  • 1/2 cup grated parmesan cheese

Oils & Condiments

  • 1/4 cup olive oil

Spices & Herbs

  • 4 cloves garlic, minced
  • 1 teaspoon italian seasoning
  • to taste salt and pepper

Garnish

  • optional fresh parsley for garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix olive oil, garlic, Italian seasoning, salt, and pepper.
  • Toss potatoes in the mixture and spread on a baking sheet.
  • Coat chicken with remaining mixture and place on the sheet.
  • Sprinkle Parmesan, bake for 25-30 mins, then garnish with parsley.
