  • Preheat your oven to 350°F (175°C).
  • Roll out the refrigerated sugar cookie dough onto a greased 12-inch pizza pan or baking sheet to form a large circle, about 1/4-inch thick.
  • Bake the cookie base in the preheated oven for 12-15 minutes, or until lightly golden. Remove from the oven and let it cool completely.
  • In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  • Spread the cream cheese mixture evenly over the cooled cookie base, leaving a small border around the edges.
  • Arrange the sliced strawberries, blueberries, raspberries, and diced kiwi (if using) in a decorative pattern on top of the cream cheese layer. Create a patriotic design, such as stripes and a corner of blueberries for the 'stars' to resemble the American flag.
  • In a small microwave-safe bowl, combine the apricot preserves and water. Microwave for 10-15 seconds, then stir until smooth.
  • Using a pastry brush, lightly glaze the fruit with the apricot mixture to give it a shiny finish.
  • Refrigerate the fruit pizza for at least 30 minutes before serving to allow it to set. Slice and enjoy!

Notes

You can substitute other fruits like blackberries or mango for a different flavor profile. Ensure the cookie base is completely cooled before adding the cream cheese layer.
