  • 1 pound ground turkey beef sausage
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper (any color), chopped
  • 2 cloves garlic, minced
  • 14.5 ounce diced tomatoes, undrained
  • 15 ounce black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.25 teaspoon smoked paprika
  • to taste Salt and pepper
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground turkey beef sausage and cook, breaking it up with a spoon, until browned.
  • Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  • Stir in garlic and cook for 1 minute more.
  • Add diced tomatoes, black beans, corn, chili powder, cumin, and smoked paprika to the skillet.
  • Season with salt and pepper to taste.
  • Bring to a simmer and cook for 10-15 minutes, or until the sauce has thickened slightly.
  • Serve hot, topped with your favorite toppings.

Notes

Adjust the amount of chili powder to your preferred level of spiciness.
