Ingredients

  • 2 cups cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper diced
  • 1 cup corn, frozen or fresh
  • 1 avocado diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • to taste salt and pepper

Instructions 

  • Combine quinoa, black beans, bell pepper, and corn in a bowl.
  • Whisk olive oil, lime juice, cumin, salt, and pepper in a small bowl.
  • Pour dressing over the mixture and toss gently.
  • Fold in diced avocado and cilantro.
  • Serve immediately or chill for 30 minutes.

Notes
