A flavorful roasted chicken infused with fresh herbs and citrus, perfect for a hearty and aromatic meal.

Ingredients

Main

  • 1 whole chicken (about 4-5 lbs)
  • 2 pieces lemons (1 sliced, 1 juiced)
  • 4 cloves garlic, minced
  • 0.25 cup olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • to taste salt and pepper salt and pepper
  • 1 orange orange, sliced (optional)
  • 1 onion onion, quartered (optional)

Instructions 

  • Preheat oven to 425Β°F (220Β°C).
  • Mix olive oil, lemon juice, garlic, herbs, salt, and pepper. Rub over chicken and inside cavity with lemon, orange, and onion.
  • Place chicken in a roasting pan, surround with lemon slices, and roast for 75 minutes until internal temp reaches 165Β°F (74Β°C).
  • Let rest for 10-15 minutes, then carve and serve with pan juices and herbs.

Notes

For extra flavor, baste the chicken during roasting.
