A flavorful roasted chicken infused with fresh herbs and citrus, perfect for a hearty and aromatic meal.
Ingredients

Instructions
Preheat oven to 425Β°F (220Β°C).
Mix olive oil, lemon juice, garlic, herbs, salt, and pepper. Rub over chicken and inside cavity with lemon, orange, and onion.
Place chicken in a roasting pan, surround with lemon slices, and roast for 75 minutes until internal temp reaches 165Β°F (74Β°C).
Let rest for 10-15 minutes, then carve and serve with pan juices and herbs.
Notes
For extra flavor, baste the chicken during roasting.
